Sausage, Pear & Sage Stuffing

Sausage, sourdough, parsley, and sage make a classic stuffing, but slightly sweet, fragrant pear is the real winner here.

INGREDIENTS

  • 4 cupssourdough bread, cubed (or other crusty bread)
  • 6-8Italian-style sausages, about 3/4 lb / 375g total
  • 1 cupchicken broth
  • 2 stalkscelery, diced
  • 1onion, medium, chopped
  • 1pear, medium, diced
  • 1 tbspfresh sage, chopped
  • 1/4 cupfresh parsley, chopped
  • 1egg, large, beaten
  • salt, to taste
  • black pepper, to taste
  • 1 tspolive oil

INSTRUCTIONS

  1. Cut the sourdough bread into cubes and put it in a large bowl. Crusty bread gives the stuffing more texture.

  2. Remove the sausage from its casings and cook in a frying pan (no extra oil needed), breaking it up with a wooden spoon. Sausage with herbs and spices already built in makes for a more flavorful stuffing.

  3. Push the sausage to the side of the pan. Add the chopped onion and diced celery and cook until softened, about 5 minutes. Mix everything together, then add the diced pear, sage, and parsley and cook 2 minutes longer.

  4. Add the sausage mixture to the bowl with the bread cubes. Pour in the chicken broth and mix to combine, then add the beaten egg, salt, and pepper. Quickly stir everything together.

  5. Empty the stuffing into a buttered baking dish and brush the top with the olive oil for a golden, crusty top. Bake at 350°F for 30 minutes.
