Italian-Style Beef Ragu with Cheesy Polenta
A hearty beef sauce spooned over creamy polenta, a rib-sticking alternative when you're avoiding pasta.
INGREDIENTS
4 SERVINGS- 1 cupquick-cooking polenta
- 3/4 cup (3 oz)grated Parmigiano-Reggiano cheese, divided
- 1/4 cupcream cheese or mascarpone
- 1 tbspolive oil
- 1 poundground beef
- 1 cupchopped yellow onion
- 1 clovegarlic, minced
- 1 tbspfresh rosemary, chopped
- 1 tbspfresh oregano, chopped
- 1 tspcrushed red pepper
- 1/4 tspkosher salt
- 1 28-ounce cancrushed fire-roasted tomatoes
- 1/2 cupfresh basil leaves, torn
INSTRUCTIONS
4 STEPSCook the polenta in a medium saucepan according to the package directions. Stir in 1/3 cup of the cheese and the cream cheese at the end.
