House of Prime Rib-Style Salad
A cold, crisp iceberg-romaine-watercress salad with beets, egg, and pimentos, tossed with a tangy, emulsified dressing.
INGREDIENTS
6 SERVINGS- 1/2head iceberg lettuce, torn
- 1small head romaine, torn
- 1bunch watercress, tough stems removed
- 1/2 cupcooked or pickled beets, finely diced
- 2hard-boiled eggs, finely chopped
- 2 tbspdiced pimentos
- freshly ground black pepper
- 1large egg yolk
- 3 tbspapple cider vinegar
- 1 tbspdry sherry
- 1 tspWorcestershire sauce
- 1 tspsugar
- 3/4 tspseasoned salt, preferably Lawry's
- 1/2 tspsweet paprika
- 1/4 tspgarlic powder
- 1 tspDijon mustard
- 1/2 cupneutral oil, preferably canola
- 1 to 2 tbspcold water
INSTRUCTIONS
8 STEPSCombine the egg yolk, apple cider vinegar, sherry, Worcestershire, sugar, seasoned salt, paprika, garlic powder, and Dijon mustard. Whisk until completely combined.

Taste before serving — it should be tangy, slightly sweet, savory, and well seasoned.
Wash and thoroughly dry all the greens, then refrigerate until very cold. Chill a large stainless steel or glass mixing bowl.
