Green Peppercorn Sauce
A rich brandy and cream pan sauce studded with green peppercorns, the classic Beef Wellington accompaniment.

INGREDIENTS
8 SERVINGS- 2 tbspolive oil
- 2shallots, sliced
- 2 clovesgarlic, peeled and smashed
- 3 sprigsfresh thyme, leaves only
- 1 cupbrandy
- 1 boxbeef stock
- 2 cupscream
- 2 tbspgrainy mustard
- 1/2 cupgreen peppercorns in brine, drained, brine reserved
INSTRUCTIONS
4 STEPSIn the same pan used to sear the beef, add the olive oil, shallots, garlic, and thyme, and cook over medium heat.
1–2 MINolive oil · shallots · garlic · fresh thymeRemove the pan from the heat and carefully add the brandy. Ignite the alcohol with a match or click lighter and let the flames reduce, then return the pan to the heat.
brandyAdd the beef stock and reduce by about half. Strain out the solids.
beef stockAdd the cream and mustard, and reduce by about half again. Turn off the heat and stir in the green peppercorns.

Notes
- Made using the same pan the beef was seared in, to capture the fond.
- Use extreme caution when igniting alcohol. Remove the pan from the heat source before adding it, and carefully ignite with a match or click lighter.
